Growing Food from Scraps

I've felt perhaps overly proud of myself in the past for not putting my food scraps in the trash, instead composting them or alternately, making stock out of my vegetable scraps and then composting them.  At some point I saw some photos on the internet of people regrowing food right out of these same scraps I had been repurposing. Sure, compost is great, but food more directly is much better. I wasn't sure how challenging it would be so I threw my scallion scraps in a little container with some soil, rocks, and water, and they've been growing surprisingly quick.
